Enjoy the combination of fresh, sweet tomatoes, creamy Brie cheese, and fragrant basil. This no-cook sauce is made with just four ingredients in the time it takes to cook the pasta. Instead of thin spaghetti, you can use any pasta you have on hand. The secret ingredient is the starchy pasta cooking liquid. It will help bring the sauce to the right consistency and melt the cheese.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 450 g thin spaghetti
  • 900 g of bull's heart tomatoes (about 3 medium)
  • 1/4 cup extra-virgin olive oil
  • 1/4 cup chopped fresh basil leaves, plus extra for serving
  • 200 g Brie cheese, cut into 1 cm pieces.

Cooking the dish according to the recipe:


  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions.
  2. Meanwhile, coarsely grate the tomatoes into a large bowl, discarding any large chunks of skin. Stir in the olive oil, basil, and 2 teaspoons of salt. Add the Brie cheese.

  3. Drain the pasta, setting aside 1/4 cup of the cooking water. Add the pasta to the tomato mixture and stir. Add the pasta cooking water, a little at a time, to rehydrate the pasta if needed and help the Brie partially melt.
