This pasta is prepared with all the appetizers you'd find on a popular Italian antipasti plate. It includes deli meats, artichokes, olives, vegetables, and cheese. Antipasti is typically served before the main course, but in this recipe, along with the spaghetti, the appetizers become part of the main course. Serve with fresh crusty bread to mop up all the delicious juices.

Ingredients:

  • 340 gr. dry spaghetti
  • 1 tbsp. l. olive oil
  • 110 g sopressata or salami, cut into strips
  • 1 can (400g) canned artichoke hearts, patted dry and cut into 4 pieces
  • 6 stuffed Spanish olives, halved, + 2 tbsp brine
  • 4 Kalamata olives, halved
  • 1 whole roasted red bell pepper, thinly sliced
  • 1 can (400 g) of canned chopped tomatoes
  • 4-5 fresh basil leaves + extra for serving
  • 0.5 cup fresh mozzarella, cut into 1 cm pieces.
  • Crustless bread, for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Bring a medium saucepan of water to a boil, add the pasta, and cook according to package directions; drain, reserving 1/2 cup of the water. Return the pasta to the pan.
  • Step 2
  • Meanwhile, heat the olive oil in a large nonstick skillet over medium-high heat. Add the soppressata and cook, stirring, until the oil turns reddish, about 3 minutes. Add the artichoke hearts, Spanish olives, Kalamata olives, and roasted red peppers and toss to coat.
  • Step 3
  • Add the tomatoes, basil leaves, olive brine, and pasta water. Bring to a boil and simmer until most of the water has evaporated and the sauce has thickened slightly, 8-10 minutes.
  • Step 4
  • Add the sauce and mozzarella to the pasta in the pan and toss. Divide among 4 bowls and sprinkle with basil. Serve the pasta with bread.
