Cinnamon Raisin Bread is perfect for breakfast, dessert, or anytime during the day. It's so easy to make in a bread machine that you might be tempted to bake a loaf for each family member. The resulting bread is sweet, fluffy, and deliciously moist. The raisin, sugar, and cinnamon filling makes it a delightful treat any time of day. We recommend baking this bread in a horizontal bread machine to ensure the filling is evenly distributed throughout the loaf and doesn't settle to the bottom.
The recipes use measuring containers with the following volumes:

Ingredients for the recipe:
Dough
- 1 cup whole milk, heated to 25°C
- 2 tablespoons unsalted butter at room temperature
- 1.5 tsp coarse salt
- 3 tbsp. granulated sugar
- 3 cups of bread flour
- 1.5 tsp active dry yeast
- 1 tbsp. l. milk powder
- 1 cup raisins
Filling
- 8 tbsp unsalted butter, room temperature, plus extra for greasing the pan
- 0.5 cup brown sugar
- 2 tsp ground cinnamon
- 1/4 teaspoon coarse salt
- Special equipment: horizontal bread maker for baking weighing 900 g.

Cooking the dish according to the recipe:
- Dough:
Place the dough ingredients into the bread machine's baking pan in the following order: milk, butter, salt, granulated sugar, bread flour, yeast, powdered milk, and raisins. Set the machine to make sweet bread and start the cycle (see Note). - Filling:
Meanwhile, in a medium bowl, beat together the butter, brown sugar, cinnamon, and salt until smooth. At the start of Rise 3 (about 1.5 hours after starting), pause the cycle (do not reset it). Remove the pan from the machine and turn the dough out onto a lightly floured work surface. Remove the paddle from the pan, grease the pan with butter, and set aside. - Divide the dough in two. Roll into two 22 cm squares, each about 1 cm thick. Spread the cinnamon mixture evenly over the dough, right to the edges. Place one square of dough on top of the other. Starting with the side closest to you, roll the dough into a tight log. Fold the edges in to keep the filling in. Pinch the seams to seal the filling inside.
- Place the roll into the prepared pan and return it to the bread machine. Resume the sweet bread cycle. Let it rise completely, then bake for about 2 hours.
- Once the cycle is complete, carefully remove the hot bread from the pan. Let the bread cool in the pan for 15 minutes, then transfer it to a wire rack to cool completely, about 1 hour. Slice and serve. The bread can be stored in a tightly sealed container for up to a week.
