This is the perfect dinner roll recipe for busy homemakers: the bread machine kneads and bakes the dough. All you need to do is quickly shape the rolls mid-cycle. The herb butter adds more flavor, and the rolls peel off more easily from the finished loaf. We recommend using a horizontal bread machine to prevent the herb butter from settling to the bottom.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


Dough

  • 1 cup whole milk, warmed to about 25°C
  • 2 tablespoons unsalted butter at room temperature
  • 1.5 tsp coarse salt
  • 2 tablespoons of sugar
  • 3 cups bread flour (see note) + extra for dusting
  • 2 tsp. instant yeast
  • 1 tbsp. l. milk powder

Butter with herbs

  • 165 g unsalted butter at room temperature
  • 2 tbsp chopped fresh parsley
  • 2 tbsp chopped fresh basil
  • 1 clove of garlic, grated
  • Special equipment: horizontal bread maker for baking weighing 900 g.

Cooking the dish according to the recipe:


  1. Dough:

    Place the dough ingredients into the bread machine's baking pan in the following order: milk, butter, salt, sugar, bread flour, yeast, and milk powder. Set the machine to make sweet bread and start the cycle (see Note).
  2. At the beginning of rise 3 (approximately 1.5 hours after starting), pause the cycle (do not reset it). Remove the pan from the machine and turn the dough out onto a lightly floured work surface. Remove the paddle from the pan, grease the pan with butter, and set aside.

  3. Butter with herbs:

    Melt 110 g (8 tbsp) butter in a medium bowl. Add parsley, basil, and garlic.
  4. Roll the dough into a 30 cm square, about 0.5 cm thick. Cut the dough into 16 equal squares. Dip each square in the butter mixture, fold in half, and place in a baking pan (this will give your bread a more flavorful texture and make the pieces easier to separate). You should have two rows of 8 pieces each.
  5. Return the pan to the bread machine and resume the sweet bread cycle. Let it rise, then bake for about 2 hours.
  6. Once the cycle is complete, carefully remove the hot pan. Let the bread cool in the pan for 5 minutes, then transfer to a serving platter. Brush the bread with the remaining 4 tablespoons of butter and serve immediately.

    Settings, cycles, and cooking times may vary depending on your bread maker model. Always follow the manufacturer's instructions. This recipe was tested on a Breville Custom Loaf BBM800XL bread maker.
