Merguez spice, along with harissa, is an essential ingredient in making spicy merguez sausages. It makes the sausages incredibly tasty, mouth-watering, and full of the flavors of Eastern cuisine. This spice mix can be purchased at the store, but it's even better to make it yourself, especially since it's so simple and all the ingredients are readily available. Mix the spices and store them in a jar. If you want a sweet aftertaste to your spicy sausages, you can add powdered sugar to the mixture. Use this seasoning not only for merguez sausages, but also for any ground meat dishes, such as cutlets, meatballs, or meatloaf.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 1/4 cup sweet paprika
  • 2 tbsp fennel seeds (ground)
  • 2 tbsp. l. cumin (ground)
  • 1 tbsp coriander seeds (ground)
  • 2 tbsp. salt
  • 1 tsp cinnamon (ground)
  • 1 teaspoon cayenne pepper
  • 3/4 tsp black pepper
  • Optional: 4 teaspoons powdered sugar
