What could be more refreshing and invigorating in the summer heat than lemon popsicles? It's quite easy to make; you don't even need popsicle molds. Just make lemon syrup and stir in basil leaves. This herb makes an unusual alternative to the more traditional mint and adds a vibrant, vibrant flavor to the lemon. Strain the syrup, then mix it with water and freeze it in a large container. Scrape it with a fork every hour until it forms a snow-like mass. Don't throw away the lemon rinds; they'll make a nice serving bowl for your frozen dessert.

Combine the juice of 5 lemons and 3/4 cup each of sugar and water in a saucepan and bring to a boil. Turn off the heat, add 1/2 cup of basil leaves and the zest of 2 lemons (cut into wide strips) and let steep for 45 minutes; then strain. Add 2 cups of cold water, then pour the liquid into a baking dish and freeze for 1 hour. Meanwhile, scoop out the pulp from 6 lemon halves and freeze them. Scrape the ice with a fork; leave in the freezer for another 4 hours, scraping every hour. Serve the fruit ice in lemon bowls.
