A healthy alternative to traditional French fries, these potato wedges require just two tablespoons of vegetable oil, and they turn out incredibly crispy after baking in the oven. No need to peel the potatoes; simply wash them thoroughly, and for a delicious flavor, toss the slices with garlic, chili powder, and dried oregano. They make a delicious dipping sauce. Preheat a rimmed baking sheet to 450°F (230°C). Cut 3 large Russet Burbank potatoes into wedges and toss with salt and 2 tablespoons vegetable oil; arrange the wedges, cut-side down, on the hot baking sheet. Bake until golden brown on the bottom, 30 minutes, then turn over and sprinkle with 1 sliced garlic clove and 1 teaspoon each ancho chili powder and dried oregano. Bake for an additional 15 minutes. Serve with lemon wedges.
