How to Make Lentil Brownies
Go back Print version

Time: 1 hour 10 min.
Complexity: easily
Quantity: 9 cakes

This healthy chocolate brownie is made with lentils, which are rich in protein, fiber, and iron, but you won't notice the beany flavor. The taste and texture are almost like a real brownie, and you can eat it without the guilt of extra carbs. The batter is made from cooked light brown lentils, ground oats, almond paste, natural applesauce, and egg. Sweetened with honey and semisweet chocolate chips, the brownie is incredibly chocolatey, soft on the inside, and crisp on the outside, just like a traditional brownie should be.

The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:

  • 0.5 cups dry light brown lentils
  • 1 cup oatmeal

  • 0.5 tsp of soda
  • 1/4 teaspoon coarse salt
  • 0.5 cup natural applesauce

Cooking the dish according to the recipe:

  1. Preheat oven to 350°F (175°C). Spray an 8x8 inch (20x20cm) square baking dish with cooking spray and set aside.
  2. Place the dried lentils in a small saucepan and add 1 cup of water. Bring to a boil, cover, and simmer until the lentils are tender and most of the liquid has been absorbed, 15-20 minutes.

  3. Place the oats, cocoa powder, baking powder, baking soda, and salt in a food processor. Process until a flour forms.
  4. Add the cooked lentils (and any remaining liquid), applesauce, honey, almond butter, vanilla extract, and egg and process in a food processor until smooth. Using a spoon, stir in at least 1 cup of chocolate chips.
  5. Pour the batter into the prepared baking pan and smooth the surface with a spatula. Sprinkle with the remaining chocolate chips. Bake the brownies for about 25 minutes. Let them cool for at least 10 minutes, then slice and serve.
