This mac 'n' cheese is the king of casseroles. It's all about the right sauce. It's made with three types of cheese—cream cheese, sharp cheddar, and extra-sharp cheddar—which give it an incredibly gooey texture and a complex, multifaceted flavor. Bake the macaroni in the cheese sauce until golden brown and serve hot.

The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:

  • 1/4 cup unsalted butter, plus extra for greasing the pan

  • 0.5 cup heavy cream + more if needed
  • 110 g of cream cheese
  • 450 g sharp cheddar, grated

Cooking the dish according to the recipe:

  1. Preheat oven to 175°C. Grease a 22x32 cm baking dish with butter.
  2. Bring a large saucepan of salted water to a boil. Add the pasta and cook, stirring occasionally, until al dente, about 7 minutes. Drain the pasta in a colander, rinse with cold water, and set aside.

  3. In the same pan you cooked the pasta in, melt 1/4 cup of butter over medium heat. Add the flour and stir until smooth. Stirring constantly, slowly pour in the milk, then the cream. Bring to a boil, add the cream cheese and grated cheddar, setting aside 1/2 cup, and stir until melted.
  4. Add garlic, 0.5 teaspoon salt, and 1/4 teaspoon black pepper. Remove the cheese sauce from the heat and stir in the pasta. Season with salt and pepper to taste.
  5. In a small bowl, whisk together the eggs and sour cream, then add to the macaroni and cheese.
  6. Pour the mixture into the prepared baking dish, top with diced cheddar, and sprinkle with the remaining 1/2 cup grated cheddar. Bake until the top begins to brown, about 20 minutes. Cover tightly with foil and bake for another 10-15 minutes.
