A coquito is a rum-based coconut cocktail, a staple Christmas treat in Puerto Rico. Sunny Anderson decided to make its tropical flavor even more festive by adding orange juice and liqueur. It turned out perfectly. The cocktail is moderately sweet, aromatic, and leaves a pleasant aftertaste. Serve it as a shot or as a long drink over ice.

Cooking the dish according to the recipe:

  1. In a large saucepan, combine the coconut milk, evaporated milk, unsweetened condensed milk, orange juice, pumpkin pie spice, vanilla, and egg yolks. Place over medium-low heat. Whisk vigorously to combine the yolks and cook until smooth and foamy, 5-8 minutes. Keep whisking! This will require some elbow grease.
  2. Remove from heat and add rum and orange liqueur. Chill the mixture in an ice bath. Alternatively, pour the coquito into three 1-liter bottles or a 4-liter pitcher and refrigerate for 2 hours until completely chilled.

  3. Serve the coquito in shot glasses, garnished with orange zest and pumpkin pie spice. Serve over ice.
