Make a vibrant confetti of corn, orange bell peppers, red onions, and herbs as a side dish, perfect for any meat dish. Cut the corn kernels off the cob, finely chop the remaining vegetables, and fry everything in a pan with a mixture of olive oil and butter, adding spices to taste. For an even more vibrant look, you can use bell peppers of different colors and mix some yellow corn with some white. The resulting side dish is filled with summer colors, aromas, and flavors.

Ingredients for the recipe:
- 2 tbsp. l. olive oil
- 0.5 cup chopped red onion
- 1 small orange bell pepper, diced into 1cm cubes.
- 2 tbsp (30 g) butter
- Corn kernels, cut from 5 ears of yellow or white corn (4 cups)
- 1.5 tsp coarse salt
- 1 teaspoon ground black pepper
- 2 tablespoons thinly sliced fresh basil, chopped fresh chives, and/or chopped parsley leaves

Cooking the dish according to the recipe:
- Heat olive oil in a large skillet over medium heat. Add the onion and sauté for 5 minutes, until softened. Add the bell pepper and cook for another 2 minutes.
- Add butter to the pan and melt. Cook over medium heat, add corn, salt, and pepper, and cook, stirring occasionally, for 5-7 minutes, until the corn loses its starchiness. Season with salt to taste, gently stir in basil or other herbs, and serve hot.
