Its delicious, spongy crumb and thick crust pair perfectly with the gooey, cheesy filling, creating a pizza that's just like the real deal. The bread is toasted in garlic oil until golden and fragrant, then topped with ricotta, fried mushrooms, and mozzarella. Once the pizza is baked in the oven and all the cheese has melted, immediately sprinkle it with a third cheese—Parmesan. Ingredients for the recipe:
- 1 loaf of soft French or Italian bread, cut in half horizontally
- 1/4 cup olive oil
- 220 g of mushrooms, sliced
- 3 cloves garlic, crushed
- 3/4 cup semi-skimmed ricotta
- 1 tbsp. grated dry mozzarella
- 1/4 cup coarsely chopped parsley
- 2 tbsp. l. grated parmesan
- Red pepper flakes, to taste
- 3 ripe tomatoes, chopped
- 2 tablespoons balsamic vinegar

Cooking the dish according to the recipe:
- Preheat the oven to broil. Heat a large skillet over medium-high heat. Add 1 tablespoon of olive oil and the mushrooms, season with salt and pepper. Cook, stirring, until the mushrooms are golden brown, about 5 minutes.
- In a small bowl, combine 1/4 cup olive oil and garlic. Place the sliced bread on a baking sheet and drizzle with garlic oil and season with salt. Grill until golden brown, 2-3 minutes. Spread ricotta on the bread, then top with mushrooms and mozzarella. Grill until the cheese is golden brown and bubbling, 2-5 minutes; remove to a cutting board.
- Cut the bread into slices. Sprinkle with parsley, Parmesan, and red pepper. Drizzle the tomatoes with vinegar and the remaining 1 tablespoon of olive oil, season with salt and pepper. Serve with pizza.
