Cauliflower Pizza (Vegetable Pizza Base)

Katya Lee's simple cauliflower pizza crust requires no dough. She simply chops the vegetables finely, then adds eggs and two types of cheese for a rich, moist crust. She then forms the mixture into a traditional circle and bakes it in the oven.


Ingredients:

  • 1 head of cauliflower (stem removed)
  • 1/2 tbsp. grated mozzarella cheese
  • 1/4 tbsp. grated parmesan
  • 1/2 tsp dried oregano
  • 1/2 tsp coarse salt
  • 1/4 tsp garlic powder
  • 2 lightly beaten eggs
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 205°C. Line a baking sheet with parchment paper.
  • Step 2
  • Separate the cauliflower into florets and pulse them finely in a food processor. Steam and drain well. (I place it on a towel to absorb all the moisture.) Let cool.
  • Step 3
  • In a bowl, combine the cauliflower with mozzarella, Parmesan, oregano, salt, garlic powder, and eggs. Transfer to the center of a baking sheet and form into a circle suitable for a pizza crust. Bake for 20 minutes.

    Add your favorite filling and bake for another 10 minutes.
