This aromatic cauliflower puree is a healthy alternative to mashed potatoes, perfect for both holiday meals and everyday cooking. Turmeric and garlic added during cooking, along with a coconut oil dressing, give the puree a pleasant golden hue and a spicy flavor and aroma. It makes a great side dish, rich in essential dietary fiber. Sprinkle with fresh parsley before serving.

Recipe:


Toss the florets of 1 head of cauliflower with 1/2 teaspoon of turmeric and coarse salt. Combine in a saucepan with 2 cups of water and 2 crushed garlic cloves and heat over high heat. Bring to a boil, then cover and simmer until tender, 10-15 minutes. Drain and puree the cauliflower in a food processor. Add 2 tablespoons of coconut oil and pulse. Season with salt and pepper to taste and sprinkle with chopped parsley.
