If you're concerned about healthy eating, this recipe is for you. Substitute cauliflower for your usual, but starchier, mashed potatoes, for example, when serving with fatty and heavy meat dishes, to balance them with a light cabbage side dish. Visually, cauliflower mashed potatoes will look similar to potato mash. To avoid it feeling too bland, give it a light, creamy flavor by adding sage-flavored butter and seasoning with nutmeg.

Trim the florets from 1 large head of cauliflower and place them in a steamer basket filled with 1 inch (2.5 cm) of boiling water. Cover and steam until tender, about 20 minutes. Toss the cauliflower with 3 tablespoons (45 g) butter, a pinch of nutmeg, and salt to taste. Sauté the sage leaves in a few tablespoons of butter. Drizzle the butter over the puree.

Use a food processor or immersion blender to puree the cauliflower, as it is too fibrous for a potato masher.
