In addition to avocado, this light summer salad includes jicama (radish can be substituted), mango, and pineapple. All these ingredients infuse the dish with a variety of contrasting textures and flavors, which are evenly balanced by a vegetable oil-based dressing with freshly squeezed lime and orange juice. Cilantro and onion complement the fruit with the perfect spicy note. The salad is very refreshing and tropical. It's a perfect side dish for grilled meats.

In a large bowl, combine 3 tablespoons vegetable oil, 1 tablespoon each freshly squeezed lime juice and orange juice, 1 minced shallot, and 1/2 teaspoon salt. Add 2 diced avocados, 1 1/2 cups diced jicama or radishes, 1/2 cup each diced mango and pineapple, and 2 tablespoons chopped cilantro; toss gently. Season with salt to taste.
