This incredibly healthy, juicy salad with a refreshing flavor can be served as an appetizer with almost any meal. Its main ingredient is immature edamame soybeans, packed with protein and essential micronutrients, which are retained even after cooking. To enrich the salad with even more vitamins, dietary fiber, and flavor, the edamame beans are mixed with thinly sliced fresh zucchini, carrots, green onions, and dill, and dressed with lemon juice and olive oil.

Recipe:
Cook 2 cups frozen shelled edamame beans according to package directions. In a large bowl, combine 2 tablespoons each lemon juice and olive oil, 1 teaspoon grated lemon zest, and 1/2 teaspoon each sugar and coarse salt. Add the edamame, 1 zucchini, halved and thinly sliced, 1 grated carrot, 2 chopped green onions, and 2 tablespoons finely chopped dill. Season with salt and pepper and stir.
