Juicy medium-rare roast beef with a pink center, crispy fried onions, and a tangy, creamy horseradish sauce complement each other harmoniously in this hearty sandwich with contrasting textures. Add as much onion as you can fit, and don't be afraid to overdo it! It'll only get better.

Creamy Horseradish Sauce
- 0.5 cup mayonnaise
- 0.5 cup sour cream
- 1/4 cup horseradish
- 2 teaspoons of honey
- 2 teaspoons Dijon mustard
Crispy onions
- 2 cups of sour milk or kefir
- 2 onions, thinly sliced lengthwise
- Vegetable oil for frying
- 2 cups of flour
- 2 tsp cayenne pepper
- 2 tsp paprika
Sandwiches
- 8 fresh onion buns, halved, brushed with butter and toasted until golden brown
- 4 thick slices sharp cheddar
- 900 g high-quality roast beef, medium rare, thinly sliced

Cooking the dish according to the recipe:
- Horseradish sauce:
In a bowl, combine mayonnaise, sour cream, horseradish, honey, and Dijon mustard. Season with salt and pepper. - In a medium sized cauldron, heat 7 cm of vegetable oil to 175°C. Pour the sour milk over the onions and let them steep for about 30 minutes.
- Deep-fried onions:
Mix flour, cayenne pepper, paprika, and a little salt and black pepper. Remove the onions from the sour milk and thoroughly coat them in the flour. Fry in batches until golden, 2-3 minutes. Transfer to paper towels to drain excess oil, and season with salt while the onions are hot. - Sandwiches:
Place a slice of cheddar on toasted onion buns, pile the roast beef on top, add as many crispy onions as will fit in the sandwich, then spread a generous amount of horseradish sauce on the top half of the bun and sandwich.
