Black beans cooked with green chili peppers and ground chipotle peppers create a mildly spicy and warming dish with a pleasant smoky flavor. To avoid long cooking times, use canned beans. With the right spices, their flavor will be deep and rich. Perfect for a side dish or as a filling for tacos or burritos.

- 1 small yellow onion, diced
- 2 cloves garlic, crushed
- 1 tsp ground cumin
- 1 teaspoon coarse salt
- 0.5 tsp ground chipotle pepper
- 1/4 tsp cayenne pepper
- 1 can (120g) diced green chili
- 2 x 425g cans black beans, rinsed
- 1 cup vegetable broth
- 2 tbsp chopped fresh cilantro
- 1/4 cup cotija cheese

Cooking the dish according to the recipe:
- Heat oil in a large skillet over medium-high heat. Add the onion and cook until softened, about 3 minutes. Add the garlic, cumin, salt, chili powder, and cayenne pepper and cook until fragrant, about 30 seconds.
- Add the green chili, beans, and broth and bring to a simmer. Cook, stirring occasionally, until the beans are tender and the sauce has thickened, 5–7 minutes. Transfer to a serving bowl and garnish with cilantro leaves and cotija cheese.
