How to Make Yellow Rice with Black Beans

Annatto seeds, a traditional spice in Puerto Rican cuisine, add a sunny color and nutty notes to this fragrant, fluffy rice. Typically served with black beans, the yellow rice adds a vibrant, appetizing pop of color.


Ingredients:


Rice
  • 2 tablespoons extra-virgin olive oil
  • 1 finely chopped onion
  • Half a green bell pepper, seeded and finely chopped
  • 1 teaspoon ground annatto seeds
  • 1.5 cups long-grain rice (preferably unparboiled)
  • 2.5 cups of water
  • 2 teaspoons coarse salt
  • 1 bay leaf

Black beans
  • 1 and 1/4 cups black beans (about 200 g)
  • 12 tbsp of water
  • 1 bay leaf
  • 2 tablespoons extra-virgin olive oil
  • 1 medium onion, chopped
  • 1 green bell pepper, seeded and finely chopped
  • 10 cloves garlic, crushed
  • 2 tsp ground cumin
  • 2 tsp dried oregano
  • 1 teaspoon ground coriander
  • 1 tbsp red wine vinegar + extra for serving
  • 1 tbsp coarse salt
  • A pinch of cayenne pepper
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a medium saucepan with a tight-fitting lid, heat the oil over medium-high heat. Add the onion, pepper, and annatto and cook, stirring, until softened, about 2 minutes. Add the rice and cook, stirring, until golden brown, about 2 minutes more. Add the water, salt, and bay leaf and bring to a boil. Wrap the lid tightly with a kitchen towel. Cover the rice, reduce the heat, and simmer for 20 minutes.
  • Step 2
  • Remove the rice from the heat and let it sit, covered, for another 10 minutes. Remove the lid and fluff the rice with a fork. Serve with black beans.
  • Step 3
  • Black beans:

    Place the beans in a large saucepan, add water and bay leaf, and bring to a boil. Cover and let simmer for 1 hour.
  • Step 4
  • Bring the beans back to a boil, reduce heat and simmer, uncovered, for 1.5 hours.
  • Step 5
  • Heat oil in a medium skillet over medium-high heat. Add the onion and pepper and cook, stirring, until softened, about 5 minutes. Add the garlic, cumin, oregano, and coriander and cook, stirring, until fragrant, about 1 minute more. Add the onion mixture to the beans and continue to simmer until the beans are very tender and the liquid has thickened, about 1 1/2 hours more.
  • Step 6
  • If the beans seem too thick, adjust the consistency by adding a little water. Add vinegar, salt, and cayenne pepper to taste. Serve.
