Black beans get a pleasant tropical flavor with the addition of coconut water, coconut oil, and lime juice. Top cooked beans with green onions, and you've got a great side dish for fried chicken, a complement to steamed rice, or even a filling for tacos or burritos.

Ingredients:

  • 2 cups dry black beans, rinsed
  • 2 cups coconut water
  • 1 tbsp. l. coconut oil
  • Juice of 1 lime
  • 2 green onions (green part only), thinly sliced
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Soak the beans overnight in cold water.
  • Step 2
  • Drain the beans and transfer them to a large saucepan. Add 3 cups of cold water, coconut water, and 2 teaspoons of salt. Bring to a boil over medium heat. Cook for 2 minutes, then reduce heat to low, cover, and simmer until tender, 30-45 minutes (older beans will take longer to cook).

  • When the beans are tender, add coconut oil and lime juice, season with salt and pepper to taste. Transfer to a serving platter and garnish with green onions.
