Grilled Polish smoked sausages are served on long hoagie buns with caramelized onions, smoked cream cheese, and mustard. Adobo sauce, made from a jar of chipotle peppers, adds a subtle smoky flavor and a tangy bite to the cheese. These sandwiches are delicious and juicy. A great alternative to a traditional hot dog!

Cooking the dish according to the recipe:
- In a medium bowl, combine the cream cheese and adobo sauce. Transfer to a zip-lock plastic bag and refrigerate until ready to use.
- Preheat a grill pan over medium-high heat. Add the onion, drizzle with olive oil, and season with salt and pepper. Cook, stirring, until the onion is soft and golden around the edges, 15 to 20 minutes.
- Place sausages cut-side down in the skillet and cook, turning once, until grill marks appear, 8 to 10 minutes.
- To assemble the sandwiches, place a sausage on the bottom half of each bun.
- Remove the cream cheese mixture from the refrigerator and snip a corner off the bag. Pipe cheese into the center of each sausage. Top with fried onions and a little mustard, and cover with the bun tops.
