"Because beef tongue is such an overlooked cut of beef, I decided to cook it into one of the most popular dishes: tacos. Pressure cooker tongue turns out as tender as steak and costs about half as much. I didn't want to waste the delicious simmering liquid, so I just poured it into a blender to see what would happen. It was delicious, but the fat that had been released left the texture oily. By adding a little xanthan gum, I was able to transform this beef broth into something almost as thick and delicious as Mexican chili con queso, but without the cheese. The sauce is larger than the recipe calls for, so you can simply serve it with tortilla chips for dipping," shares Justin Warner.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 1.3 kg fresh beef tongue, cut into 4 equal pieces
  • 3 cloves garlic, unpeeled, crushed
  • 1 medium yellow onion, peeled and quartered
  • 1 cup beef broth
  • 1/4 cup chipotle peppers in adobo sauce
  • 1 tbsp. salt
  • 2 tablespoons of oil
  • 2 tsp xanthan gum
  • Warm corn tortillas, homemade or store-bought, for serving
  • Topping: diced onion, cilantro leaves, lime wedges, salsa, and whatever else you like in a taco
  • Special equipment: stovetop pressure cooker

Cooking the dish according to the recipe:


  1. Place the tongue, garlic, onion, beef broth, chipotle adobo sauce, and salt in the pressure cooker. Follow the manufacturer's instructions, secure the lid, and set the pressure cooker over high heat.
  2. Cook for 30 minutes. Following the manufacturer's instructions, quickly release the pressure cooker, then open the lid and use tongs to remove the tongue, leaving the liquid in the pan. Let the tongue cool in a colander under cool running water. Use your fingers or a knife to remove the skin. Dice the meat and sprinkle with coarse salt.

  3. Place a 12-inch cast-iron skillet over medium-high heat and add oil. Heat the oil, then add the beef tongue and cook until evenly browned, about 5 minutes.
  4. Meanwhile, combine the liquid from the pan with xanthan gum to make queso sauce.
  5. Top the tortillas with fried beef tongue, diced onion, and cilantro. Serve with lime wedges, queso, and salsa.
