After trimming the juicy, vibrant greens from young beets, don't throw them away. Instead, prepare a delicious and healthy side dish, rich in fiber and micronutrients. Cut the leaves into small pieces and sauté for a few minutes in olive oil with garlic and red pepper. As soon as the greens have wilted, remove from the heat. Lemon zest and juice will add even more flavor to your vitamin-rich side dish. Once you've tried fried beet greens, you'll never throw away such a valuable ingredient again. Serve with any meat dish.

Cooking the dish according to the recipe:
- Heat a medium skillet with olive oil over medium heat until shimmering. Add the beet greens and garlic and stir until wilted and softened, 5-8 minutes. Add the red pepper flakes, lemon zest and juice and stir. Season with salt and pepper to taste.
