A bouquet of spices like cayenne, cumin, and Sichuan pepper elevates French fries to a whole new level of flavor, making them not only an interesting, spicy beer appetizer but also a great side dish that can even be served with festive meats. Bake store-bought frozen French fries in the oven and toss with the spice mixture. For this recipe, we recommend using ribbed potatoes. This shape allows the spices to better coat them.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 900 g frozen crinkle-cut French fries
  • 0.5 cup chopped dried chili peppers (cayenne or arbol)
  • 1/4 cup vegetable oil
  • 2 tablespoons cumin seeds
  • 1 tbsp Sichuan chili pepper
  • 4 green onions, chopped
  • Black peppercorns

Cooking the dish according to the recipe:


  1. Position oven racks in the upper and lower thirds of the oven and preheat to 230°C (430°F). Line 2 rimmed baking sheets with foil, then arrange the fries on them.
  2. Bake, stirring once or twice, until golden and crisp, 30 to 45 minutes. Transfer to a large bowl.

  3. Place the chili peppers in a bowl, cover with a plate, and shake to release the seeds. Collect the chili peppers, leaving the seeds in the bowl.
  4. Heat vegetable oil in a large skillet over medium heat. Add cumin seeds, peppercorns, chopped chili, and 1 teaspoon salt and cook, stirring, for 2-3 minutes. Add green onions and remove from heat.
  5. Toss the fries with the herb oil and season with salt. Remove and discard any large pieces of chili.
