This beef jerky recipe was shared by the chef at Country Cat, a Portland restaurant where this delicacy has many fans. To prepare it, you'll need a dehydrator. Thin slices of beef are rolled in a mixture of brown sugar, salt, granulated garlic, and chili pepper and dried for two days. The resulting jerky is moderately sweet with spicy and savory notes. Perfect with a glass of beer!



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 4 cups brown sugar
  • 0.5 cup coarse salt
  • 1 tbsp. ground celery seeds
  • 1 tbsp chili flakes
  • 1 tbsp granulated garlic
  • 2.3 kg beef top round steak, cut into long thin strips
  • Special equipment: dehydrator

Cooking the dish according to the recipe:


  1. Combine sugar, salt, celery seeds, chili flakes, and garlic in a large bowl. Add the meat and stir well to coat completely. Refrigerate and marinate for 24 hours.
  2. Place the beef strips on dehydrator trays. Dehydrate at 125°F (51°C) for 24 hours.
