"Try the combination of tahini, garlic, and lemon, a favorite throughout the Mediterranean and Middle East, in a fantastic salad dressing sweetened with honey. It also works well with grilled fish, roasted chicken, steamed vegetables, grain bowls, and more. When you add the tahini to the dressing, you may find it thickens considerably. Don't worry—it will become pourable again once you add a little water," advises Amy Stevenson, chef and cookbook author.
The recipes use measuring containers with the following volumes:

3/4 cup (st.) - 180 ml.

1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:
- 1/4 cup freshly squeezed lemon juice
- 1 teaspoon of honey
- 1 clove garlic, crushed to a paste consistency
- 0.5 cups well-stirred tahini
- 1/3 cup cold water
- 1/4 tsp ground cumin
- A pinch of ground cayenne pepper
- Coarse salt

Cooking the dish according to the recipe:
- In a medium bowl, combine lemon juice, honey, and garlic paste. Gradually add tahini.
- Whisk in the water little by little until the sauce is smooth and the consistency of cold heavy cream. Add the cumin, cayenne pepper, and 1/4 teaspoon of salt. Season to taste.
- The salad dressing can be stored in a tightly sealed container in the refrigerator for 1 day or in the freezer for up to 1 month. Before using, bring the dressing to room temperature or mix with a small amount of water to make it pourable again.
