Winter isn't a reason to limit the amount of vegetables in your diet. Seasonal root vegetables are especially beneficial during this time, as they're just as rich in vitamins, minerals, and fiber as summer vegetables. These include beets, carrots, and parsnips. This recipe turns them into a delicious holiday side dish. Add radishes, spices, and olive oil to the root vegetables and roast in the oven. Serve with any holiday meat or poultry.
The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:
- 5 medium carrots, peeled and cut diagonally into 5 cm pieces.
- 4 medium parsnips, peeled, halved lengthwise and sliced diagonally into 5cm pieces.
- 3 medium golden beets, peeled and cut in half or into quarters if large
- 1 bunch radishes, trimmed and cut in half, leaving the small ones whole
- 4 sprigs of thyme
- 2 cloves garlic, coarsely chopped
- 3 tbsp. l. olive oil
- 0.5 tsp freshly grated nutmeg
- 1 teaspoon finely grated lemon zest

Cooking the dish according to the recipe:
- Preheat oven to 220°C.
- In a large bowl, combine the carrots, parsnips, beets, and radishes with the thyme, garlic, olive oil, nutmeg, 1 teaspoon salt, and black pepper to taste. Arrange in a single layer on a rimmed baking sheet. Bake, stirring once, until soft and golden, about 25 minutes. Stir in the lemon zest and transfer to a serving bowl.
