This Asian buckwheat soba noodle salad is quick and easy to make, yet the flavor is rich and multifaceted. This dressing is made with rice vinegar, honey, tamari, aromatic dark sesame oil, and chili sauce. It's a wonderful blend that delivers a whole bouquet of vibrant flavors, with sweet, savory, and tart notes, all complemented by a unique umami aroma. Simply toss the cooked buckwheat noodles with chopped fresh vegetables in the dressing and serve. - 2 tablespoons tamari
- 2 tsp. dark sesame oil
- 2 tsp chili sauce (recommended: Sriracha)
- 1/4 cup canola oil
- 1 carrot, peeled and grated on a coarse grater
- 1 red bell pepper, seeded and thinly sliced
- 1/4 cucumber, peel and grate on a coarse grater
- 3 green onions, thinly sliced
- 1/4 cup chopped fresh cilantro leaves
