To make meatloaf healthier, combine lean ground beef with ground turkey and add chopped spinach and plenty of cilantro. Instead of the traditional ketchup glaze, top each meatloaf with slices of tomato, and for a more interesting twist, add a slice of cheddar. Bake in the oven and serve with a green salad in a light dressing.

Cooking the dish according to the recipe:
- Preheat oven to 200°C. Line a baking sheet with parchment paper.
- Combine the spinach, cilantro, and garlic in a food processor and finely chop. Transfer to a medium bowl. Add the ground beef, ground turkey, milk, breadcrumbs, chili powder, egg, 2 teaspoons Worcestershire sauce, 1/2 teaspoon salt, and a pinch of freshly ground black pepper. Mix thoroughly with your hands.
- Combine the vinegar with the remaining 2 teaspoons of Worcestershire sauce. Divide the meat mixture into 4 portions and form into 2.5 cm thick oval patties. Place on the prepared baking sheet.
- Top each meatloaf with 3 tomato slices and drizzle with a little vinegar and Worcestershire sauce mixture. Bake until the meatloaf reaches an internal temperature of 165°F (74°C), 18-20 minutes.
- Drizzle with a little vinegar and Worcestershire sauce, top each meatloaf with a slice of cheddar, and continue baking until the cheese is melted, another 2 minutes. Pat the bottom of each meatloaf with a paper towel to remove excess water. Serve with a salad, if desired.
