Cloud bread is light, low, and bun-shaped, falling somewhere between a fluffy cake and the rich pastries you'd find in Chinatowns. It lacks the density of bread, but has an airy, cloud-like texture. We decided to make this bread as a large rectangular focaccia. It's fluffy and light, perfect for sandwiches with other ingredients, or as a substitute for bread that's heavy and full of carbs.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • Extra virgin olive oil, for greasing the pan and drizzling the bread
  • 6 large eggs, yolks and whites separated
  • 1/2 tsp cream of tartar
  • 1/2 tsp fine salt
  • 2 cloves garlic, finely grated
  • 90 g of cottage cheese, room temperature
  • 1 tbsp. l. agave nectar
  • 1 plum tomato, thinly sliced
  • Sea salt flakes, for sprinkling
  • A handful of torn fresh basil leaves
  • 2 tbsp. l. grated parmesan
