Pitaya (also known as pitahaya or dragonfruit) may look like a fire artichoke, but it belongs to the cactus family. It's rich in vitamin C and B vitamins. Its white or pink flesh is high in fiber, and its small black seeds are full of healthy fats. Pitaya tastes like a cross between a pear and a kiwi, lending a tropical flair to the traditional Waldorf salad. Pitaya can be found in supermarkets on the exotic fruit aisle.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 1 large ripe pitaya
  • 1/3 cup Greek yogurt, 2% fat
  • 2 tablespoons mayonnaise
  • Juice of half a lemon
  • 1 teaspoon of honey
  • 0.5 tsp freshly grated ginger root
  • 0.5 tsp coarse salt
  • 1 small Granny Smith apple, cut into 1/2-inch pieces (core removed)
  • 0.5 cups red seedless grapes, halved
  • 0.5 cup chopped fresh cilantro leaves
  • 1/3 cup coarsely chopped cashews
  • 4 lettuce or iceberg lettuce leaves

Cooking the dish according to the recipe:


  1. Cut the dragon fruit into quarters lengthwise. Run your finger under the skin, pull it back, and separate it in one piece. Cut each quarter into 0.5 cm-thick triangles.
  2. In a large bowl, combine yogurt, mayonnaise, lemon juice, honey, ginger, and salt. Add apples, grapes, 3/4 of the dragon fruit, and 3/4 of each cilantro and cashews. Stir to distribute the ingredients evenly and refrigerate for about 1 hour.

  3. Place a lettuce leaf on each of 4 plates and top with a spoonful of lettuce. Garnish with the remaining dragon fruit pieces and sprinkle with cilantro and cashews.

    Note

    To determine if a dragon fruit is ripe, squeeze it lightly. The fruit should be firm, like a ripe avocado.
