This savory barbecue sauce is made with bacon fat rendered from the bacon, so you can eat the fried bacon while it's cooking. Brown sugar, tomato paste, apple cider vinegar, and a bouquet of aromatic spices imbue it with a whole range of flavors. This Texas-style barbecue sauce is perfect for beef brisket or short ribs.

Ingredients for the recipe:
- 4 strips bacon, chopped
- 0.5 cup finely chopped onion
- 2 cloves garlic, crushed
- 180 g tomato paste
- 1 cup beef broth
- 0.5 cup brown sugar
- 1/4 cup apple cider vinegar
- 1 tsp ground cumin
- 0.5 - 1 tsp cayenne pepper
- 0.5 tsp coarse salt
- 0.5 tsp freshly ground black pepper

Cooking the dish according to the recipe:
- In a medium saucepan over medium-low heat, cook the bacon until crisp, 8 to 10 minutes. Transfer to a paper towel-lined plate to drain. Enjoy the bacon.
- Add the onion to the pan with the rendered fat and cook over medium-low heat until it begins to caramelize, 6-8 minutes. Add the garlic and cook for another 2 minutes. Add the tomato paste and cook, stirring occasionally, for another 3 minutes.
- Add the broth, sugar, vinegar, cumin, cayenne pepper, salt, and pepper and bring to a boil. Simmer until the sauce thickens, 15-20 minutes.
- Let cool to room temperature before using. This sauce goes great with beef brisket or short ribs.
