This hearty Middle Eastern-style dish is ready in less than half an hour. It's perfect for a quick and delicious weekday dinner. Ground beef is mixed with spices, including the contrasting flavors of cinnamon and cumin, which imbue the meat with an oriental flavor, and the patties are pan-fried. Meanwhile, couscous, carrots, and dried apricots steam in a saucepan. Serve the patties with a side salad and a refreshing yogurt sauce topped with chopped cilantro and paprika.

Cooking the dish according to the recipe:

  1. In a medium saucepan, combine 2 cups of water, half of the grated carrots, 2 tablespoons of olive oil, dried apricots, 1/4 teaspoon of salt, and a pinch of ground black pepper and bring to a boil. Add the couscous, cover, and remove from heat. Set aside until ready to serve.
  2. Meanwhile, in a small bowl, combine the yogurt, half the cilantro, 1 teaspoon paprika, and a large pinch of salt.

  3. In a large bowl, combine the ground beef, green onions, cumin, cinnamon, 1 teaspoon salt, the remaining grated carrots, and 1 teaspoon paprika. Mix with your hands, being careful not to pack the mixture too tightly. Form into four 2cm-thick oval patties.
  4. In a large nonstick skillet, heat the remaining 1 tablespoon olive oil over medium-high heat. Add the patties and cook until golden brown, 4-5 minutes per side for medium-rare. Fluff the couscous with a fork and stir in the remaining cilantro.
  5. Serve the cutlets with couscous and yogurt sauce.
