Cutlets "came" to Russian cuisine from European cuisine. Originally, they were a cut of meat with a rib bone (now called a natural bone-in cutlet). Today, a cutlet is a flatbread-shaped dish made from ground meat. Prepared according to this recipe, cutlets are very juicy, flavorful, and savory.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 1/3 cup breadcrumbs
  • 1/3 cup milk
  • 1/3 cup chopped parsley
  • 1 large egg
  • 3 tablespoons Worcestershire sauce
  • 1 small onion, finely chopped
  • 1 tsp chili powder
  • 2 finely chopped garlic cloves
  • 700 g of ground beef, pork and/or veal
  • 1 tbsp. vegetable oil
  • 1/2 cup ketchup
  • 1-2 tbsp. l. brown sugar
  • 1 tbsp. apple cider vinegar

Cooking the dish according to the recipe:


  1. Combine the breadcrumbs, milk, parsley, egg, Worcestershire sauce, onion, chili powder, and garlic in a large bowl. Add the ground beef, season with salt and pepper, and mix thoroughly with your hands. Form the mixture into six oval patties, 8-10 cm long.
  2. Pour vegetable oil into a large nonstick frying pan and set it over high heat. Add the patties and fry for 3 minutes on each side.

  3. Combine ketchup, sugar, and vinegar in a bowl and brush a few tablespoons of the sauce over the patties. Add 1/2 cup water to the pan, cover, and simmer over low heat for 15 minutes until tender.
  4. Transfer the patties to a plate. Add the remaining ketchup mixture to the pan and cook over high heat, stirring constantly, for 3-5 minutes. Serve four patties with the hot sauce poured over them, reserving two for quesadillas.
