Spinach in a creamy sauce with crispy, salty bacon bits and melting Gruyère cheese is a perfect complement to any holiday dish, whether it's meat, poultry, or fish. This side dish is made with frozen spinach. Be sure to squeeze out the excess water after defrosting to prevent the sauce from becoming watery.

Recipe:
In a skillet, fry 3 slices chopped bacon until crisp. Remove from the skillet; discard most of the fat, reserving 2 tablespoons. Add 1 finely chopped onion and 1 minced garlic clove and cook for 3 minutes. Sprinkle with 1 tablespoon flour; cook, stirring, for 1 minute. Stir in 1 1/2 cups milk and season with salt and nutmeg. Cook until the sauce thickens, 4 minutes. Stir in 1/2 cup grated Gruyere, 1 pound defrosted chopped spinach (squeeze out all the water), and the fried bacon. Cook for another 2 minutes.
