- Extra-virgin olive oil
- 1 tbsp unsalted butter
- 1 onion, chopped
- 2 cloves garlic, crushed
- 900 g fresh young spinach without stems
- 0.5 cups heavy cream
- 0.5 tsp freshly grated nutmeg
- Sea salt and freshly ground black pepper

Preparation:
- Step 1
- Heat a large saucepan over medium heat. Step 2
- Add the olive oil, then add the butter and stir until melted. Sauté the onion and garlic until soft, about 5 minutes. Add the spinach in batches, pressing it down with a wooden spoon to speed up wilting. Continue adding spinach as space appears in the pan. Step 3
- Sauté the spinach until wilted, then reduce the heat and add the cream and nutmeg. Stir and cook for 10 minutes. Season with salt and pepper. Serve hot.
