This salmon dish is made entirely in one pan in under 30 minutes and features the classic flavors of shrimp scampi in a creamy sauce. The salmon fillet is served in a flavorful sauce with garlic toast, which you'll love dipping and savoring. For extra crispiness, you can press the toast down with something heavy, like a small cast-iron skillet, while frying. This technique is also helpful when you want to make bruschetta without turning on the oven.

Ingredients:

  • 3 tbsp extra-virgin olive oil + extra for greasing the pan
  • 4 slices of country bread, 1 cm thick.
  • 5 cloves of garlic, 1 crushed, 4 finely chopped
  • 4 skinless salmon fillets, weighing 170 g each.
  • 3 tablespoons unsalted butter
  • 1/4 tsp crushed red pepper flakes
  • 0.5 cups dry white wine
  • 1 tbsp lemon juice
  • 0.5 cups heavy cream
  • 1/4 cup chopped fresh parsley
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Heat a large nonstick skillet over medium-low heat and lightly brush with olive oil. Add the bread slices and cook, checking occasionally, until golden brown on the bottom, about 3 minutes. Flip and cook the other side for 2-3 minutes. While the toast is still hot, rub one side of each slice with crushed garlic and brush with 1 tablespoon of olive oil. Season with salt and pepper and set aside. Wipe the skillet dry with a clean paper towel.
  • Step 2
  • In the same skillet, heat 1 tablespoon olive oil over medium-high heat. Pat the salmon dry with paper towels and season both sides with salt and black pepper. When the oil is hot, add the salmon, flesh side down, and sear until well-browned, 2-3 minutes. Flip and sear until the salmon is cooked through, another 2-3 minutes depending on the thickness of the salmon. Transfer to a plate and wipe the skillet with a clean paper towel.
  • Step 3
  • Heat a skillet over medium heat. Add the remaining 1 tablespoon olive oil and the butter. When the butter has melted, add the chopped garlic and red pepper flakes and cook, stirring, for about 30 seconds; be careful not to burn the garlic. Add the wine and lemon juice and bring to a simmer. Cook, stirring, until reduced by half, 1 to 2 minutes. Add the cream and cook, stirring, until slightly thickened, 1 to 2 minutes. Return the salmon to the skillet and simmer over low heat until heated through, 1 to 2 minutes. Stir in the parsley and serve in wide bowls with garlic toast.
