Chow fun with turkey and vegetables - a detailed recipe.

1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.
1 glass (st.) - 250 ml.

Ingredients for the recipe:
- 350 g wide rice noodles or pappardelle, fettuccine
- 2 tsp dark sesame oil
- 1/4 cup oyster sauce
- 2 tbsp. l. rice vinegar
- 3 tablespoons of vegetable oil
- 1 small eggplant, cut into slices
- 1 cup of any fresh small mushrooms (120 g)
- 2 cloves garlic, sliced
- 350 g of ground turkey
- 1 bunch of green onions, cut into rings
- 1/4 cup chopped fresh cilantro

Cooking the dish according to the recipe:
- Cook the noodles in salted water according to package directions. Reserve 250g of the cooking water. Drain and rinse the noodles. Transfer the noodles to a large bowl and toss with 1 teaspoon of sesame oil.
- Mix oyster sauce and vinegar in a bowl and set aside.
- Prepare vegetables: In a large skillet, sauté the eggplant in 2 tablespoons of vegetable oil for about 2 minutes. Add the mushrooms and sauté for another 1 minute. Set the vegetables aside in the skillet and add the remaining 1 tablespoon of vegetable oil. Add the garlic and sauté for 30 seconds. ground turkey and cook, stirring, until cooked through, about 3 minutes. Stir in the ground turkey and vegetables, add the green onions and half of the oyster sauce mixture, and cook for another 1 minute.
- Add the noodles, reserved broth, oyster sauce mixture, and 1 teaspoon of sesame oil to the vegetables and turkey. Cook, stirring constantly, until tender, 1 to 2 minutes.
- When serving, sprinkle the chow fun with cilantro.
