These protein- and vegetable-packed slider sandwiches, inspired by Southeast Asian cuisine, are perfect for a large gathering, like a bachelorette party, because the appetizers are served on juicy lettuce leaves instead of bread! To avoid spending all day making a mountain of patties, spread the ground meat in an even layer in a large baking dish, bake, and cut into individual squares. For this recipe, use ground turkey: the combination of dark and white meat adds a richer flavor. Place bowls of other ingredients around the sliders—lettuce, nuts, grated carrots, onions, and sauce—and encourage guests to assemble their own appetizers. You'll save time, and everyone will be happy.

Ingredients for the recipe:
Sliders
- 0.9 kg ground turkey (not lean)
- 1 tbsp peanut or vegetable oil
- 1 large egg
- 1/3 cup plain breadcrumbs
- 3 green onions, thinly sliced
- 1 tbsp Asian fish sauce
- A large pinch of red pepper flakes
- 1/4 cup hoisin sauce
- 24 thin slices of cucumber (and a small cucumber)
- 1 cup cilantro leaves with soft stems
- Special equipment: baking dish measuring 25 x 37 cm.
For serving
- 24 large leaves of bibb lettuce
- 1 medium carrot, grated
- Half a small red onion, thinly sliced
- Lime wedges
- 1/4 cup unsalted roasted peanuts, coarsely chopped
- Sriracha sauce, optional

Cooking the dish according to the recipe:
- Position the oven rack 10-15 cm from the heating element and preheat the oven to grill mode. Grease a 25 x 37 cm baking sheet with vegetable oil.
- In a large bowl, combine ground turkey, egg, breadcrumbs, green onions, fish sauce, red pepper flakes, 1/2 teaspoon salt, and a pinch of black pepper. Mix gently to combine. Mound the ground meat into the prepared pan and spread it out in an even layer. Divide the meat into 24 even squares, cutting all the way through. Brush the top with hoisin sauce. Grill until the meat is browned and glazed and an internal temperature of 165°F (74°C) is reached on a meat thermometer, 8 to 9 minutes.
- Carefully drain any excess liquid from the pan. Cut the meat again along the marked lines to make 24 patties, and go over the lines with a spatula. Top each patty with a cucumber slice and a cilantro leaf.
- While the sliders are cooking, arrange the lettuce, remaining cilantro, carrots, onions, and lime wedges on a serving platter. Place the peanuts and Sriracha sauce, if using, in small serving bowls. Place a spatula in the pan with the patties and invite guests to assemble their own sandwiches with their preferred fillings.
