This delicious and healthy bowl features popular Mediterranean ingredients: bulgur, a salad of finely chopped fresh vegetables, shredded chicken in a tart vinaigrette, and hummus. Served with pita bread, it's incredibly filling.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 1 cup bulgur
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • Half a small shallot, finely chopped
  • 1 tsp ground cumin
  • 1 teaspoon Dijon mustard
  • 2 cups shredded grilled chicken
  • 2 cups shredded kale
  • 1 tbsp. shredded romaine lettuce
  • 0.5 cup chopped cucumber
  • 0.5 cup chopped red bell pepper
  • 0.5 cups chopped cherry tomatoes
  • Hummus, for serving
  • Chopped fresh parsley, for serving
  • Pita, for serving

Cooking the dish according to the recipe:


  1. Cook bulgur according to package directions; add salt to taste.
  2. In a medium bowl, combine the olive oil, vinegar, shallot, cumin, and mustard; season with salt and pepper to taste. In a separate bowl, combine half of the dressing with the chicken. Combine the remaining dressing with the kale, romaine lettuce, cucumber, bell pepper, and tomatoes.

  3. Divide the bulgur into 4 bowls and top with the coleslaw and chicken. Drizzle with hummus and sprinkle with parsley. Serve the bowls with pita bread.
