Ingredients for the recipe:
- 570 g coarsely ground pork
- 110 g, broken into small pieces Manchego cheese
- 4 Portuguese buns, halved
- 1/4 tbsp. olives stuffed with pimento peppers
- 2 tbsp vegetable oil, plus a little more for greasing
- 4 cloves of garlic
- 1 tbsp. l. dried oregano
- 1 tbsp. chili powder
- 2 tsp smoked paprika
- 1 teaspoon ground coriander
- 1 tsp ground cumin
- 1/2 tsp ground allspice
- 3 tablespoons mayonnaise
- Salt and ground black pepper
- Pimento peppers, tomatoes, red onions and/or lettuce as toppings

Cooking the dish according to the recipe:
- Preheat grill to medium-high heat.
In a food processor, combine 2 tablespoons of vegetable oil, olives, garlic, oregano, chili powder, paprika, coriander, cumin, and allspice. Blend until smooth. Transfer the mixture to a large bowl and add 2 tablespoons of mayonnaise. - Mix the ground meat with the olive mixture. Season with salt and pepper. Form 4 patties, about 1.5 cm thick. Make a well in each patty, stuff it with a little cheese, and wrap the ground meat around it. Brush the patties with oil, season with salt and pepper.
- Brush the grill with oil. Cook the patties until stripes appear on the bottom, 5 minutes. Flip and continue cooking until done, another 5 minutes.
Spread the remaining tablespoon of mayonnaise on the cut sides of the buns. Lightly toast them. Serve the patties in buns with your choice of filling.
