Burgers with brie cheese and fries

A juicy, spicy beef patty is served on a sweet brioche crust with creamy melted brie and zesty watercress. Expect an incredible combination of contrasting flavors and textures. Serve the burgers with fries and gherkins.

Ingredients:

  • 350 g frozen French fries
  • 1 tbsp + 1 tsp Dijon mustard
  • 2 tsp white wine vinegar or champagne vinegar
  • 1 small shallot, chopped
  • 1 tbsp + 2 tsp vegetable oil
  • 700 g of ground beef
  • 1 tbsp Worcestershire sauce
  • 170 g Brie cheese, cut into 8 thin slices
  • 4 brioche buns, cut in half horizontally
  • 1 small bunch watercress, tough ends trimmed
  • Gherkins and ketchup for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Bake the fries according to package directions. Meanwhile, in a large bowl, combine 1 teaspoon mustard, vinegar, half of the chopped shallot, and 2 teaspoons vegetable oil; set aside.
  • Step 2
  • In a medium bowl, combine the ground beef, remaining chopped shallots, remaining 1 tablespoon mustard, Worcestershire sauce, 1/2 teaspoon salt, and a few freshly ground black peppers. Form into four 4-inch (2-cm) thick patties. In a large skillet, heat the remaining 1 tablespoon vegetable oil over medium heat.
  • Step 3
  • Add the patties and cook until golden brown, 3 to 4 minutes per side for medium-rare; 2 minutes before the end of the cooking time, top each patty with 2 slices of brie and cover with a lid to melt.
  • Step 4
  • Toast the buns. Add the watercress to the dressing bowl, season lightly with salt and pepper, and toss to combine. Place the patties on the buns and top with the lettuce. Serve the burgers with fries, gherkins, and ketchup.
