These burgers will change the way you think about sandwiches, as they're made without buns or bread. Mix ground lamb with pecorino cheese and sun-dried tomatoes, wrap them in slices of Italian prosciutto, and pan-fry them. Under the crispy ham shell, you'll get juicy, flavorful patties with the sweet flavor of sun-dried tomatoes. Top the finished burgers with fresh tomato slices and basil leaves. Instead of sauce, drizzle them with balsamic vinegar and olive oil, which perfectly complement the Italian charm of the dish. Arugula or lettuce are the perfect side dish for these prosciutto-wrapped patties.


Ingredients:

  • 450 g of minced lamb
  • 0.5 cup plain breadcrumbs
  • 1/4 cup chopped parsley
  • 1 large egg, lightly beaten
  • 2 tbsp. whole milk
  • 0.5 cup grated Pecorino Romano cheese
  • 1/4 cup chopped sun-dried tomatoes
  • 3/4 tsp salt
  • 3/4 tsp ground black pepper
  • 6 large slices of medium-thick prosciutto
  • 1/4 cup olive oil
  • Fresh basil leaves for serving
  • Tomato slices for serving
  • Balsamic vinegar for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a large bowl, combine the breadcrumbs, parsley, milk, egg, cheese, sun-dried tomatoes, salt, and pepper. Add the lamb and mix well. Form the ground meat into 6 patties, each 2.5 cm thick. Arrange the prosciutto slices on a cutting board or sheet of parchment paper. Place a patty in the center of each slice and wrap the prosciutto around it.
  • Step 2
  • Heat a large, heavy-bottomed skillet over medium heat. Add the olive oil and heat for 2 minutes. Place the prosciutto-wrapped burgers, seam-side down, in the skillet and cook over medium heat for 6 to 8 minutes, until the ham is golden brown. Flip the burgers and cook for another 6 to 8 minutes.
  • Step 3
  • Transfer them to a serving platter or individual plates. Top each burger with 2-3 basil leaves, 1-2 tomato slices, and drizzle with olive oil and balsamic vinegar. Serve immediately.
