Try macaroni in a luxurious, silky sauce made with three types of cheese (cheddar, cream cheese, and American cheese), added in equal parts. White pepper and mustard powder add a subtle piquant note, while white wine adds a more complex flavor. If you don't have white wine on hand, add a little lemon zest.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 450 g medium shell pasta
  • 2 tablespoons unrefined coconut oil
  • 2 tbsp. flour
  • 2 cups unsweetened almond milk
  • 0.5 tsp freshly ground white pepper
  • 1/4 tsp ground mustard seeds
  • 220 g of cream cheese at room temperature
  • 220 g sharp white cheddar, grated
  • 220 g white American cheese, grated or diced
  • 2 tbsp white wine, optional

Cooking the dish according to the recipe:


  1. Bring a large pot of salted water to a boil. Cook the pasta according to package directions. Set aside.
  2. In a 25 cm (9 in) skillet with high sides, melt the coconut oil over medium heat. Add the flour and cook until golden brown, about 2 minutes. Gradually whisk in the milk. Reduce the heat to low, bring to a simmer, and simmer the sauce for about 5 minutes. Stir in white pepper and ground mustard. Add the cream cheese and stir until smooth. Add the cheddar, American cheese, and wine, if using, and cook until the cheese is completely melted. Taste and adjust the seasoning with salt, if needed.

  3. Add the cooked pasta to the cheese sauce and mix thoroughly. Taste again and season with salt before serving.
