These sesame rings originate from Spain, where they are popular among Sephardic Jews, especially on Shabbat and holidays. The delicious sesame flavor of the topping is enhanced by the tahini paste added to the dough. These cookies store well, making them perfect for taking to work or school, or keeping on hand in case of unexpected guests.

Ingredients:


Sesame cookies
  • 4 tbsp. + 2 tbsp. premium flour
  • 1 tbsp. baking powder
  • 0.5 tsp fine salt
  • 3 large whole eggs at room temperature
  • 2 large egg yolks at room temperature
  • 1 and 1/4 cups sugar
  • 1/4 tbsp. tahini (sesame paste)
  • 0.5 cups vegetable oil
  • 1 tbsp vanilla extract

Sesame glaze
  • 1 large egg white, lightly beaten
  • 1 teaspoon of honey
  • 0.5 cup raw sesame seeds
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 375°F (190°C). Line 2 baking sheets with silicone mats or parchment paper, or spray with cooking spray.
  • Step 2
  • In a medium bowl, combine the flour, baking powder, and salt. In a large bowl, beat the eggs and yolks with the sugar using a mixer until very light and fluffy, about 2 minutes. Stir in the tahini, oil, and vanilla. Fold in the flour mixture to form a soft dough. Cover the dough and set it aside for 5 minutes before forming the rings.
  • Step 3
  • Pinch off a walnut-sized piece of dough and roll it into a rope approximately 12 cm long and 1 cm thick. If the dough is sticky, lightly flour your hands and the parchment paper. Bring the ends of the rope together to form a ring. Form rings with the remaining dough.
  • Step 4
  • To cover the cookies with icingSprinkle sesame seeds on a small plate. Whisk the egg white with honey, then brush each ring with the mixture. Immediately dip the ring in the sesame seeds. Place the rings, seed side up, on the prepared baking sheet, spacing them at least 2.5 cm apart.
  • Step 5
  • Bake the rings until lightly browned, about 15–20 minutes. Transfer the cookies to a wire rack and let them cool before serving. The cookies will keep for a couple of weeks in a tightly sealed container at room temperature..

    Freezing Tips

    It can also be double-wrapped in cling film and frozen for up to a month.
