Patatas bravas are fried potato cubes drizzled with sauce. A traditional Spanish appetizer, they're served with drinks as tapas. To make delicious patatas bravas at home, combine sliced ​​potatoes (skins are fine) with mashed tomatoes and olive oil, season to taste, and bake until crispy. Serve drizzled with mayonnaise and sprinkled with green onions.

In a baking dish, combine 1 kg of diced potatoes and 0.5 kg of grated plum tomatoes with olive oil. Add a spoonful of sugar and 2 bay leaves, sprinkle with salt, paprika, and cayenne pepper to taste. Bake at 220°C (425°F) until the potatoes are tender, about 40 minutes. Dilute a little mayonnaise with water, drizzle it over the potatoes, and sprinkle with chopped green onions.
