Yuca con mojo is a traditional Cuban dish, usually served as a side dish. Despite its simplicity, it's incredibly delicious. Boiled pieces of cassava (yuca) are served with Cuban mojo, a light sauce made from sautéed onions and garlic in citrus juice.

- 1.8 kg frozen cassava
- 4 medium yellow onions, thinly sliced
- 24 cloves garlic, thinly sliced
- 0.5 cup lime juice (about 6 limes)
- 0.5 cups vegetable oil
- 1/4 cup chopped fresh oregano leaves

Preparation:
- Step 1
- Bring a large pot of salted water to a boil. Add the cassava and cook until tender, about 30 minutes. Drain and transfer to a serving platter. Step 2
- Heat oil in a small skillet over high heat. Add the onion and garlic and cook for about 1 minute, being careful not to burn them. Season with salt and pepper. Place the onion and garlic directly on top of the cassava. Drizzle with lime juice and sprinkle with oregano.
