Yuca con mojo is a traditional Cuban dish, usually served as a side dish. Despite its simplicity, it's incredibly delicious. Boiled pieces of cassava (yuca) are served with Cuban mojo, a light sauce made from sautéed onions and garlic in citrus juice.

Ingredients:

  • 1.8 kg frozen cassava
  • 4 medium yellow onions, thinly sliced
  • 24 cloves garlic, thinly sliced
  • 0.5 cup lime juice (about 6 limes)
  • 0.5 cups vegetable oil
  • 1/4 cup chopped fresh oregano leaves
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Bring a large pot of salted water to a boil. Add the cassava and cook until tender, about 30 minutes. Drain and transfer to a serving platter.
  • Step 2
  • Heat oil in a small skillet over high heat. Add the onion and garlic and cook for about 1 minute, being careful not to burn them. Season with salt and pepper. Place the onion and garlic directly on top of the cassava. Drizzle with lime juice and sprinkle with oregano.
