Cornish chicken in mojo sauce and sweet potato purée with citrus

- 1 teaspoon coriander seeds
- 1 teaspoon cumin seeds
- 2 tsp garlic powder
- 1 gherkin, butterflyed
- Olive oil to drizzle
Green mojo
- 1/4 cup olive oil
- Juice of 2 limes
- 1 bunch fresh cilantro (about 1 cup)
- 1 clove of garlic
- 1 serrano pepper, seeded
Sweet Potato Puree with Citrus
- 2 sweet potatoes, peeled and sliced
- 0.5 cup chicken broth + more as needed
- 1–2 tablespoons of honey
- 1 tbsp fresh thyme, finely chopped
- Zest and juice of 1 lemon
- Zest and juice of 1 small orange

- Preheat oven to 200°C. Place a rack on a baking sheet. Step 2
- Gherkin Chickens:
In a small skillet over medium heat, toast the coriander and cumin seeds until fragrant, a few minutes. Grind in a spice grinder. In a small bowl, combine half the ground spices, garlic powder, 1 teaspoon salt, and 1/2 teaspoon black pepper. Set aside the remaining ground spices.
Step 3 - Pat the chicken dry with paper towels and sprinkle the spice mixture on all sides. Drizzle with olive oil and place skin-side up on the prepared baking sheet. Bake until tender, 35–45 minutes. Cut in half. Step 4
- Mojo sauce:
Combine the olive oil, lime juice, cilantro, garlic, serrano, and remaining ground spices in a high-power blender. Blend until the sauce is bright green and smooth. Season with salt and pepper to taste.
Step 5 - Pour the sauce over the chicken and serve with mashed sweet potatoes.
Sweet Potato Puree with Citrus:
Place the sweet potatoes in a medium saucepan and cover with water to a depth of 1 inch (2.5 cm). Bring to a boil over high heat and season with salt. Reduce heat and simmer until the sweet potatoes are tender, 10–15 minutes. Drain. Mash the sweet potatoes in the saucepan. Add chicken broth, honey, thyme, lemon zest and juice, and orange zest and juice. Add more chicken broth if needed. Season with salt and pepper.
