Sweet potato puree with orange juice

How to Make Sweet Potato Puree with Orange Juice
Kitchen:American,
Time: 1 hour 10 min.
Complexity: easily
Servings: 8

For a festive mashed potato side dish, choose sweet potatoes. They're healthier than regular potatoes, and their unique flavor makes a great alternative to everyday mashed potatoes. To preserve as many nutrients as possible, sweet potatoes are baked whole in their skins, then peeled and mashed with the ingredients. Butter, orange juice, maple syrup, and a little chicken broth will add a richer flavor and a velvety, appetizing texture to your side dish. Serve with baked chicken, turkey, or other meats.

Ingredients:

  • 3 large sweet potatoes, about 1.3 kg.
  • 2 tablespoons unsalted butter
  • 1 teaspoon coarse salt
  • 1/4 cup orange juice
  • 2 tbsp. maple syrup
  • Heat 2 tbsp. chicken broth, homemade or store-bought, lightly salted
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.

  • Step 2
  • Peel the sweet potatoes while they're still hot. Combine the sweet potatoes, butter, salt, orange juice, maple syrup, and chicken broth in a large bowl. Mash with a potato masher until smooth. Serve immediately. You can make the sweet potatoes a day ahead and reheat them before serving.
